Warm goat cheese salad recipe

We’re already in 2014 and warm goat cheese salad was still missing from this blog… I can’t believe I’ve been writing French Cooking for Dummies recipes for more than five years and never shared with you this classic French bistrot salad recipe! Warm goat cheese salad is one of my favorite salads when eating out or fixing a quick lunch at home.

At this time of the year, everyone is thinking about how to better their habits for the year to come. Some decide to adopt healthier eating habits, other do commit to work-out more… I’m actually curious about what an average resolution length might be! Do 50% of us get keep going with their resolutions until June or July?! I’m not sure…
But we keep doing it and, don’t take me wrong, I think it’s a great way to take some time to stop, look back and actually think about ways of bettering whatever it is we’re doing to get where we want to go. My whole point is resolutions are good, they help fulfill dreams and shouldn’t be left for January! What if we took resolutions quarterly ? I bet it would work much better for me ;) Instead of new year resolutions that get forgotten after 2 months, we would take season resolutions! At least, if we’re not happy with our winter commitments we could change them when spring comes!

So, here come my winter resolutions for this blog… First, I’m thinking about posting more French classic recipes. Having waited so long for sharing the classic warm goat cheese salad despite the fact that it is one of my favorites salads to make at home or order in brasseries made me realize there are still a lot of simple and typically French recipes missing from this blog.
Second resolution is to take more attention to the seasonal products when shopping groceries and elaborating recipes. This means refraining cravings for veggies like tomatoes, peppers or zucchini I got used to eat all year round… I’m thinking if I can do it in winter, it will be a piece of cake keeping up for the rest of the year ;)

Note that the quantities used in this recipe are meant for eating this warm goat cheese salad as a starter. If you’re willing to use this goat cheese salad recipe as a light lunch, I would suggest you double the quantities indicated below.

Warm goat cheese salad recipe

Preparation time: 5 minutes – Cooking time : 5 minutes

Ingredients (for 4 servings)

9 oz (260 g) of arugula salad (or the kind of lettuce of your choice)
7 oz (200g) of goat cheese log
3/4 of a baguette (12 1-inch slices)
6 tablespoons of olive oil
1 tablespoon of balsamic vinegar
1 teaspoon of Herbes de Provence (or thyme or rosemary)
1 pinch of salt and pepper

Instructions

1/ Preheat oven on grill position.

2/ Cut baguette into 12 1-inch thick slices. Cut goat cheese log into 12 even slices.

3/ Put bread slices on a baking tray and place a piece of goat cheese on top of each. Finish topping with 3 tablespoons of olive oil, herbes de Provence and a pinch of pepper. Heat in oven for 5 minutes or until cheese is melt and starting to get a golden color.

4/ Meanwhile, wash and dry arugula salad thoroughly.

5/ Prepare vinaigrette dressing in a bowl : Pour vinegar and salt first, then add 3 tablespoons of olive oil and whisk until you get an emulsion.

6/ Serve arugula salad in 4 individual soup plates, top with vinaigrette dressing and place 3 warm goat cheese toasts on each plate.

Serve warm goat cheese salad right away.
